Spicy Beef Bolognese Sauce

Serves 4-6 people

A most deeply satisfying and heartwarming beef bolognese sauce with a deliscious, spicy kick. The epitome of comfort food!

2-3 tbsp olive oil

1 medium onion chopped

2 cloves garlic minced

2 pounds ground beef

1 generous teaspoon ground thyme

1/2 tsp red pepper flakes, or more to taste

Salt and freshly ground pepper

One 28 oz can whole tomatoes

1 ½-2 pounds rigatoni or pasta of choice

½ cup freshly grated Parmesan, plus more for serving

Heat olive oil in large soup pot over medium-high heat. Add onions and cook until almost translucent. Add garlic and stir for 1 minute. Add ground beef and cook until brown. Drain off most of the excess fat and water. Add ground thyme, red pepper flakes, salt and pepper to taste. Add canned tomatoes with their juices. Sir to combine, reduce heat to low and cover the pot. Cook covered for 30 minutes stirring occasionally. Uncover and cook an additional 30 minutes.

Prepare pasta as directed. Be sure to not overcook. Drain and add to individual bowls.

Stir in ½ cup grated parmesan into the sauce . Check and adjust the seasonings. Ladle sauce of pasta and top with more Parmesan.
