Hearty, healthy delicious soup to warm you from the inside out. Tastes as good as it looks!

2 Tbsp Extra Virgin Olive Oil (EVOO)
5 large shallots, chopped
3 medium carrots, peeled an cut
1 large red bell pepper cut into 1/2 pieces
8 oz ground turkey (or 1 lb for thicker soup)
1 Tbsp herbs de Provence
5 cups chicken stock
1 15oz can dicd tomatoes (with jalapeños option)
1 cup cooked brown rice
1 small bunch of kale with ribs removed and chopped
1 tsp sea salt
1/2 tsp fresh ground pepper
1/2 cup grated parmesan cheese
1/4 cup fresh parsley chopped (optional)
In a large pot over medium high heat, warm the olive oil. Add shallots, carrots and bell pepper and sauce, stirring frequently, until beginning to brown and soften slightly, 8-10 minutes. Add the turkey and stir until meat turns white and begins to color slightly around edges, 5-7 minutes. Add the herbes de Provence and stir for 1 minute.
Add broth, tomatoes and rice and bring to boil. Stir in kale and seasons with salt and pepper. Reduce heat to medium-low and simmer until the vegetables are tender ( 10-15 minutes).
Ladle soup into bowls. Sprinkle with parsley and parmesan.
