Yummy Comfort in Every Bite!
24 cookies. Recipe can be cut in half
- 1 stick Butter softened
- 1 ½ cups Brown Sugar firmly packed
- 2 Eggs
- 1 tsp Vanilla
- 1 ½ cups Whole Wheat flour (can be Gluten free flour but add 1 tsp Xanthium powder if so)
- 1 tsp Cinnamon
- 1/2 tsp Allspice
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 cups Rolled Oats (can be Gluten-free)
- 1/3 cup Ground Flax Seed
- 1/3 cup Raisins
- 1/3 cup chocolate chips
- 1/3 cup Walnuts or Pecans
- 1/3 cup shredded coconut
- Last 5 ingredients are optional…add extra oatmeal to replace.
- Preheat oven to 350 degrees.
- In a separate bowl, whisk together Whole Wheat flour, ground flax seed, cinnamon, allspice, baking soda and salt.
- In a large bowl, blend together butter and brown sugar until smooth. Add eggs one at a time blending in between. Add vanilla. Add flour mixture in two parts and blend until moist. Stir in rolled oats, raisins, shaved chocolate and nuts.
- Chill bowl in refrigerator for at least one hour.
- Remove bowl and shape cookies into small hockey pucks about 1-1/2 inch across and 1” high. Place 2” apart on baking sheet lined with parchment or sprayed with cooking spray.
- Bake for 10-12 minutes or until edges are slightly brown. (This will vary based on your oven and how cold the dough was when it went in) They may look a bit undercooked but that is what you want when making chewy cookies.
- Let them cool for 5 minutes before transferring to rack.
