Cozmeena’s Hearty, Healthy 7-Veggie Chicken Quinoa Soup
This is the easiest, tastiest, healthiest, yummiest soup ever and my new total fave. I’ve already made it three times since New Years and will probably make it again this week. It makes a big batch so you have some to share with friends or send back with your working kids for a home cooked meal during the week (aka Jen in Boston). It’s super simple and you can keep the ingredients as staples in your fridge, pantry and freezer so you’re always ready to go. All you have to do is pick up a pre-roasted chicken or roast one yourself. Any cooked chicken works but roasting is more flavorful.
I have been getting my frozen veggies at Trader Joe’s because they have petite peas and shelled edamame which is seriously the best thing ever in soup! Also, try Trader Joe’s Organic Free Range Chicken Broth. It is actually different from their other chicken stock and is the richest, most delicious I’ve found. No worries if you don’t have one or two of the ingredients, it will still be awesome.
You can make a vegan/vegetarian option by exchanging vegetable broth for chicken and leaving out the roasted chicken (obviously, ha!).
Serve with a thick slice of warm, whole grain bread. Freshly baked artisan breads are available at the Acme, Trader Joe’s and Tavalo Pronto in Fair Haven.
