Cozmeena’s Roasted Butternut Squash Soup

For your yummy pleasure, this much requested recipe has been a huge hit for the past four years at the Cozmeena Valentine’s Luncheons!  As we are not having the luncheon this year, I hope you’ll make it for yourself and your lucky family and remember that food is love in it’s truest sense. As you might remember, this soup is so heart warming and delicious you won’t be sure if it’s dinner or dessert.

The hardest part is peeling and cutting the butternut squash. It is very slippery, heavy and dense. You can buy it pre-cut but sometimes it is not as fresh. As it is kind of a big project, I usually make several batches ahead of time and freeze it in a more concentrated state. The recipe is so simple that you can add more squash and adjust the other ingredients to make a larger batch.

Keep additional stock on hand as the soup can be very thick (my personal preference) but thin to your desired thickness. You can also add more coconut milk from for a richer, creamer soup.  The light canned coconut milk found at Trader Joes or Whole foods is much lower in calories and tastes just the same.
